Middle eastern - lentils with babaganoush and coli-flour-rice

Prepare the dough for the flatbread
- Mix:
o 4 cups of flower
o 2 teaspoons yeast
o 1 teaspoon salt
o 2 table spoons olive oil
o 1,5 cups of water
o 2 tablespoons cumin
o 10 toes of garlic
- Kneed for 10 minutes and let rest for 30 minutes.
Babaganoush:
- 1 aubergine for 2 people
- Roast them over open fire for about 15 minutes, untill the skin is black
- Scoop out the flesh and mix with
o Tahini
o Lime juice
o Garlic
o Salt
o Peper
Lentils. Get a pot for boiling and first fry:
- 2 Onion
- 2 tablesppons Cumin
- 2 tablesppons Curry
- Pepper
- 10 toes of Garlic
- Add lentils and water and cook until they are a bit mushy.
In the meantime, finish the flatbread.
- Roll out the dough into circles of about 20cm in diameter and 2-3 mm thick.
- Fry in a hot pan for 2-3 minutes per side.
Make coliflour rice
- Raw colifour in the kitchen machine until it’s in small pieces
- Add mint if we have it
- Tomatoes in cubes
- Salt, pepper and vinigar
