Caribbean Curry – green beans, pineapple, coconut milk and chickpeas

Cook chickpeas that have been soaking overnight. (Save the water it has been soaking in)


Get a big aluminium pan and fry

-        10 toes of Garlic cut into small pieces

-        1 big onion in pieces

-        2 tomatoes in pieces

-        1 tablespoon of curry powder

-        2 stock cubes


Fry all this in a pan. Then add:

-        1 big potato in cubes

-        2 carrots in cubes


Fry for 10 minutes or so. Then add

-        1 can of coconut milk (+ water as much as is needed)

-        1 pound of green beans (remove the stick-end and cut them in pieces about 1-2cm)

-        Half a pineapple cut into pieces


Leave to simmer for as long as possible.

Make rice

Add the chickpeas to the curry.

Fry some peanuts to top it.
